First, separate broccoli into individual florets and quickly blanch or steam for 2 minutes and set aside, cut onion in half and cut into small wedges, peel carrot and cut into half inch thick and peel potatoes and cut into about 8 to 12 pieces each. Cut boneless chicken thighs into bite-size pieces. Heat oil in a frying pan and saute chicken for a few minutes until lightly browned, meanwhile heat chicken broth in a large pot at medium heat, then add chicken pieces to the broth. Heat one spoon oil in the same pan used for chicken and cook the onion, add carrot and potatoes to the pan, cook for a couple of minutes. Now transfer the vegetables to the chicken broth and lower the heat to the medium low, cover with a lid and cook for 15 minutes or until potatoes are tender. In a clean pan, melt the butter at medium heat , add the flour, all-purpose flour and cook for a couple of minutes and gradually add the milk, whisking constantly, So that sauce doesn`t form lumps and cook for a few minutes untill the sauce is smooth and thickened. Add the sauce to the stew and stir well ans season with sault and pepper to taste and cook uncover it for 10 to 15 minutes until the stew thickens, add the cooked broccoli and gently stir and serve in a bowl. |
